I think that for the first time in a long time, I can say that I am truly happy. It's not just because of my wonderful boyfriend, though he is definitely a part of it. Nor is it that I'm officially an upperclassman with a projected graduation date in 2017 (!!!) though I won't lie, that's pretty great. It's not because I'm skating three times a week this term, or how comfortable on the ice I am starting to feel.

I think it's because I'm finally comfortable with myself.  I'm not defensive about my height or my weight, my taste in music or anything else that people try to shame others about. I'm done imagining what could have been and instead have been focusing on living in the present. Things are how they are, and one can either fight things or accept them and move on. I'm done trying to fight battles I cannot win-- instead I'm going to make the best of my situation. And my situation right now is really quite simple, and quite good. I don't have a reason to create problems or make myself unhappy for no reason.

It's nice to write a post basically saying that all is well in my world, at least for now. I know that moments like this are fleeting unless you fight to keep them, and I think I'm ready to fight for happiness.

I moved dorms at the start of this term, and it's been great so far! This dorm has a much nicer kitchen that actually functions, rather than a sad little refrigerator and stove languishing alone in the dark basement. Now I'm living in a basement dorm, which sounds far more miserable than it actually is. I'm next to the laundry and kitchen, and there's a little stairwell that gets me out of here in the morning faster. Not to mention that my new roommate is extremely nice and normal... which is really appreciated after my last one.

Since I now have a kitchen that I can cook in, I've been cooking quite a bit. I've lived here like a week and cooked three times already! People have been asking me how I have the time to cook so much, which I think is kind of funny. I guess that I take some time that I could be spending watching Netflix or reading a book making myself yummy things. 

I wanted to make myself dinner tonight, but realised that I only had flour, breadcrumbs and eggs. So I figured that breading soft boiled eggs and frying them was probably going to work out in my favour. After all, what can't be fixed by rolling in breadcrumbs, right?

I medium-boiled the eggs, peeled them, and rolled them in flour.  broke the white on one of them, which means I ended up with one pretty egg and one tasty but very ugly egg. 

I rolled the floured egg in a beaten egg, then into bread crumbs. I did this twice to get a good coating on the egg. See my cute ducky chopsticks? I find it easier to cook with chopsticks most of the time, so they turned into a multi-tool of stirring, flipping, and attempting to save this project. 

I threw the sad broken egg into this tiny little pan and fried it on both sides to try and get the breading to cook. I then stopped taking pictures of the ugly little egg. 

The pretty egg really did come out pretty! I fried it in a little bit of oil until I got the breading crisp on all the sides I could flip the egg with my chopsticks. 

Tada! You can see the layers of breading, soft-ish egg white, and runny yolk pretty well here. I suspect you could hard-boil the eggs or even make them a little bit harder than this and it would work out just as well. I'm sure it would also be easier to bread the darn things as well. It was fun to break the yolk and eat it with the breaded egg white. 

And because I know my mother reads this blog and will ask: yes, I ate some vegetables with it. I keep bags of frozen veggies in the freezer because they are extremely easy to make and no one ever wants to steal them. 

If anyone knows a good website for cooking in university, please send it my way. I like these breaded eggs but I suspect I'll get tired of them if that's all I eat until I finish the carton...

It has finally snowed here in Boston! We didn't get nearly as much snow as I was hoping to get, but that's okay because there is surely more on the way. Ideally. Last winter was a bit too much with weekly blizzards and several city shut downs, but this winter hasn't had enough snow to call itself a winter yet.

My parents got two feet of snow in New Jersey... which I am very jealous of. They were supposed to go to a slow cooker party so they made a TON of chicken curry, which they are now stuck eating until they eventually thaw out. I guess I'm not jealous of that, except that I know that curry is delicious.

Since it has been pretty cold lately, my boyfriend and I decided to try our hand at making soup. I didn't have the brains to take a picture of it myself, so here's a Snapchat screenshot of it instead. It was a slow cooker recipe that took five hours... which we didn't plan for, so we ended up eating pretty late. But it was amazing! The chicken kept falling apart when I was trying to shred it. It really made a lot, so I think the "poor guy" is going to be eating it for at least another three or four days.

Also, look at the cute little snowman we built in Boston Common! I know he's not much to look at, but the snow was quite powdery and not snowman-snow. The poor little guy was only about a foot tall and is hanging out on the top of a hill under a tree. Of course we also had a bit of a snowball fight! I didn't get any pictures of that because I was too busy trying not to get hit. Unfortunately, he has significantly better aim than I do >.<

Well, here's to hoping for more snow this January, I suppose!

This post is kind of a dual-purpose post: firstly, I get to show off the yummy thing I have baked, and secondly I am going to blab a bit about how awesome my boyfriend is.

Erik really likes pumpkin spice flavoured things, so I made him a pumpkin spice cake! I just used some Penzey's pumpkin spice and some extra cinnamon to give the cake a rich spice flavour. The main frosting on the cake is a brown-butter frosting, which was delicious. I'm not sure why brown butter tastes so much better than regular butter, but it's pretty interesting. I used a tri-coloured buttercream frosting for the edge decoration.

About the guy: In the interest of my boyfriend, I'm not going to share  too much detail about him. As you could tell by the cake, his name is Erik.  He's Italian-American, a couple years older than me, and has a beard. He's the silliest person I know, and will do anything to get people around him to smile. He's also a genuinely kind and caring person, and makes me really happy.

I still haven't figured out if he reads this blog, but if you do babe, hope you had a great one :D

It's been ages since I've done a proper haul (or anything beauty related, really). I have to give a big shoutout to my lovely Aunt for giving me a gift card to Lush that allowed me to pick up lots of goodies. 

Top Right: Honey Bee Bath Bomb

I've never tried this bath bomb before, but I knew I had to buy it the second I smelled it. It smells like honey and toffee, which are quite possibly my two favourite things on the planet. I love smelling sweet enough to eat, and this bath bomb is definitely that.

Top Centre: Soft Coeur Massage Bar

Apparently this thing can be used for massage, but I have always found Lush massage bars to be excellent moisturisers. This melts beautifully and smells like chocolate! It does have almond oil in it though so if you're allergic to those, stay away.

Top Left: Butterball Bath Bomb

Butterball is a classic Lush product, and pretty hard to go wrong with. Sure, it's not brightly coloured like some of the other ones and it doesn't fizz for as long due to its size, but it's still a solid choice for a good bath. It smells sweet and makes the water soft!

Bottom Right: Pink Mini Bath Bomb

Pink Mini is probably one of Lush's cutest bath bombs. It's pink, it has flowers, and it smells delightfully sweet. I've used one of these in the past, but I'll review it properly once I use it.

Bottom Centre: Yoga Bath Bomb

Apparently this bath bomb smells like tea once it's done fizzing, and changes colours as well! I'll update more when I've tried it, but it smells peaceful.

Bottom Left: American Cream Conditioner

Since I recently got a shampoo bar from Lush called Copperhead for Christmas, I figured I might as well try a Lush conditioner as well. It was a pretty pricy bottle, but it's supposed to be wonderfully rich and moisturising. Hopefully that means I won't have to use as much product.

I can't believe it's 2016 already...

And that I haven't come up with anything to write on this blog. It wasn't for lack of trying, believe me. But sometimes I suppose it is best to take a break, even if I wasn't expecting to do so. The holidays were lovely and I'm still in New Jersey for another week, so I figured it was time to post something.

I'm writing this on my new desktop computer that my dad and I built together. I'm running Ubuntu, which was been a little bit of an adventure. It's a pretty cool OS and it's fun to use Terminal to get things to install, but I won't lie... using a Mac is a lot easier! It's fun to play computer nerd and learn new things.

There are lots of things I could be writing about, and I'm going to get started on those soon. But there are a few exciting updates... like how I'm planning to study abroad in Singapore next fall, and how I'm considering going to both London and Geneva on a study abroad this summer. Can't wait to get myself some Swiss chocolate and a cheeky Nando's.  Definitely have to get my travel in as much as possible!

Me and Bram on Christmas! We still haven't taken our tree down...

Butter chicken on New Year's Day. It was delicious.
