I cannot believe I forgot to write a blog post about these amazing lemon cupcakes, because they were great! I got the recipe here from Crazy for Crust which was surprisingly quick and easy. I ended up using my tried and true Sorted Food lemon curd (I halved the recipe for the cupcakes) which made the cupcakes truly a sweet and sour treat. Making them look adorable was pretty easy-- I made a lot of frosting, then used the biggest piping tip I had to make a big swirly. These cupcakes were silly good. My mother is normally the big lemon-sweets eater in the house, but I actually made these for myself over spring break and ate the most in total. I can't wait to go back to my parents house and bake more... "procrasti-baking" shortbread cookies at three in the morning just isn't as satisfying overall.
Oh yeah, I made two different cupcakes that were in this container to bring back to Boston. The chocolate ones were actually chocolate stout cupcakes with Bailey's icing for St. Patrick's Day, and they were really good. There wasn't enough Bailey's in the frosting to get anyone drunk, but it had a lot of flavour in it! I licked the bowl, spatula, mixers.... it was great. Chocolate cupcakes are weird (or at least that recipe was) because it was incredibly liquid-y. It was almost like water! But they came out great and I ate a bunch of those as well.
Great, now I want to eat cupcakes. Do you crave any sweets?
